- 2 tbsp vegetable oil
- 1 small white onion, finely diced
- 2 garlic cloves, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp dried Mexican oregano
- Β½ tsp smoked paprika
- Β½ tsp salt, or to taste

- 120ml beef broth
- 1 tbsp tomato paste
- 12 small corn tortillas (street-taco size β 4 to 5 inches)
- Β½ white onion, finely chopped β for topping
- Β½ cup fresh cilantro, chopped β for topping
- 2 limes, cut into wedges
- Fresh salsa, pickled jalapeΓ±os, or radish slices to serve
Step-by-Step Instructions
- Heat the oil in a large skillet over medium-high heat. Add the diced onion and cook for 3 minutes until soft and translucent. Add the garlic and cook for 30 seconds until fragrant β do not let it burn.
- Add the ground beef. Break it apart with a wooden spoon and cook until browned and no longer pink, about 6β8 minutes. Drain any excess fat if preferred.
- Stir in the chili powder, cumin, oregano, paprika, salt, and pepper. Toast the spices with the meat for 1 minute β this unlocks their full flavor.
- Mix the tomato paste with the beef broth, then pour it into the skillet. Stir well to combine. Simmer on low heat for 8β10 minutes until the sauce thickens and coats the meat beautifully. Taste and adjust salt or spice level to your liking.
- While the meat simmers, warm the tortillas. The best way is directly over a low gas flame β 20β30 seconds per side until soft and slightly charred. Keep them stacked in a clean kitchen towel to stay warm and pliable.
- To assemble: spoon a generous portion of the seasoned meat into each warm tortilla. Fold gently in half or leave open.
- Top immediately with plenty of chopped raw onion, fresh cilantro, and a generous squeeze of fresh lime juice. Serve with salsa or extra lime wedges on the side.
